Blas & Bó is an Irish owned, family business led by Award-Winning Pastry Chef, Robert Bullock.

In 2012, after more than 20 years in the corporate world of food production, Robert set up Le Patissier in Ireland.

Over the course of the following 10 years, Robert grew the business from his kitchen counter to a large commercial kitchen employing a team of talented pastry chefs.

The kitchen now produces a range of over 300 finished products for the Irish market, supplying hotel groups, catering companies, airlines, food distributors and retail with chilled and frozen premium desserts.

During the Covid lockdown, the team embarked on a project to perfect their pastry tart shells. Filled with different ingredients, they had already won several awards at Blas na h’Eireann (The Irish Food Awards).

Keeping the Irish quality ingredients of butter and free-range eggs, they played with the design and recipe to create a premium finished product.

Once they cracked the recipe and design, they then needed to find a way to take this artisan pastry shell and create a more efficient production solution combing the best of handmade but with a little automated help.

In January 2024, Blas & Bó was formed, meaning in Irish, Taste or Flavour and Bó meaning cow representing the Irish dairy element.
